CEN coffee is sourced from high-altitude farms located in the heart of Central province in Sri Lanka, where the perfect combination of climate, soil, and expertise yields exceptional Arabica beans. By using the wet processing method, we ensure a cleaner, brighter, and more vibrant cup profile, highlighting the unique terroir of coffee-growing regions.
CEN Coffee available in 5 Blends and 2 Single Origins, lovingly grown by 8 (Fair-Trade Farmer Cooperatives) and freshly packed in 1kg bags.
Wet Processing Method
Wet processing (or "washed processing") is a method that emphasizes precision and care. This method enhances acidity, clarity, and floral/fruity notes, making our coffee a favorite among specialty coffee lovers and roasters worldwide.
After harvesting;
1. Depulp the cherries to remove the outer skin.
2. Ferment the beans in water to break down mucilage.
3. Wash them thoroughly to achieve a clean, consistent flavor.
4. Dry them on raised beds or patios under controlled conditions.

CEN Coffee Processing Triangle
Sri Lanka, traditionally famous for tea, has been reviving its coffee sector, and this integrated approach helps boost productivity and global competitiveness The Coffee Processing Triangle in Sri Lanka refers to three key facilities involved in the coffee value chain, from collection to processing, drying, and research.
1. Collection & Processing Center (Kotmale)
Located in Katarandeniya, Kotmale, a region known for its cool climate and fertile lands suitable for coffee cultivation. This center is responsible for collecting freshly harvested coffee cherries from local farmers. Performs initial processing, which may include sorting, pulping (removing the outer skin), and fermentation to remove mucilage.
2. Drying Plant (Digana)
Situated in Digana, near Kandy, this facility focuses on drying processed coffee beans. After fermentation, the beans (now in parchment) are spread out to dry under the sun or using mechanical dryers to reduce moisture content. Proper drying is crucial to prevent mold and ensure quality before storage or milling.
3. Research & Development Center (Uda Peradeniya)
Located near Peradeniya (home to Sri Lanka’s Tea Research Institute and University of Peradeniya). This R&D center focuses on improving coffee cultivation, processing techniques, and product quality. May involve experiments on disease-resistant coffee varieties, fermentation methods, and sustainability practices.
